FSSC 22000 version 4.1, launched July 2017, reflects several developments in the market that have emerged since version 4 published.
ISO-22000 was released more than a decade ago and was revised in 2018. The 2018 revision has addressed the changing needs of users and is in alignment with ISO-9001:2015.
This half day course will provide a thorough introduction to the changes and will provide examples of best practice.
Course Introduction and Description
This course will focus on explaining the changes to FSSC 22000 and ISO-22000 and teach how to best achieve compliance to the updated standards.
The new version of FSSC 22000 aims to make the GFSI-recognized standard more rigorous and consistent, through the introduction of unannounced audits, food fraud prevention and FSMA readiness. Since Version 4.1 was released in 2017, companies and auditors have a year to adapt to the new requirements. This course will review the new requirements and show examples of best practice in the industry.
ISO 22000 is a standard developed by the International Organization for Standardization dealing with food safety. It is a general derivative of ISO 9001. The standard was established in 2015 and has grown to be a globally accepted standard applicable to all aspects of the supply chain.
The 2018 changes introduce two Plan-Do-Check-Act (PDCA) cycles instead of one. One cycle addresses the food safety management system and the other covers the operational processes. Risk-based thinking is addressed at both the operational and the HACCP level.

- The changes outlined in FSSC 22000 version 4.1.
- The structure and requirements of ISO-22000:2008.
- The difference between prerequisite programs (PRPs), operational prerequisite programs (oPRPs) and critical control points (CCPs).
- The risk-based approach
- How these changes will affect the current system.
